Made in 1200 watt microwave oven.
1 and 1/4cups dry roasted peanuts
1 cup sugar
1/2 cup light corn syrup
1 teaspoon butter (no substitutions)
1 and 1/2 teaspoons baking soda
1 teaspoon vanilla extract
Coat a 15 x 10 x 1 baking pan or cookie sheet with nonstick cooking spray; set aside.
In a 2-qt. microwave safe glass bowl, combine sugar and corn syrup. Microwave, uncovered, on high, for 3 minutes, stir. (Use oven mitts when removing bowl from oven, bowl will be hot). Add peanuts, stir until combined.
Continue to microwave mixture on high for 2 and 1/2 more minutes until mixture turns a light amber color. It will be very hot. Stir in butter. Microwave for 30 more seconds. Quickly stir in baking soda and vanilla, mixture will appear foamy. Blend well. Immediately pour onto prepared pan and spread as thinly as possible. (A metal spatula sprayed with non stick cooking spray works well for this). When cool, break into pieces. Makes 1 lb.

(1,592 posts)made peanut brittle every Christmas - she wouldve been horrified at the thought of doing it in the microwave but I think Ill risk her haunting me and give it a try!

(9,805 posts)method. She was famous for her peanut brittle. I made it with roasted almonds (roughly chopped) as I have a peanut allergy as well as raw pecans. I want to try it with coconut chunks. Delicious!!!
