What's for Dinner, Sun., Mar. 29, 2020

Pizza made with multi-grain crust.

We like to put an egg on the pizza. The first pizza is before it went in the oven, the second upon taking it out.





He had to put other types of cheese on the pizza because we had everything but mozzarella.

I also made a salad out of iceberg, carrots, radishes, red onion, and cherry tomatoes. French dressing for me, vinaigrette for the RG.

Dessert will be oatmeal-cranberry-walnut cookies and ginger tea.

Punjabi Green Lentils

SERVES
6
Ingredients
1 cup green lentils rinsed
5 cups water
1 medium yellow onion thinly sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon turmeric powder
2 teaspoons Kashmiri red chili powder
1/4 cup vegetable oil
2 cloves of garlic thinly sliced
1 teaspoon cumin seeds
4 dried red chilis

Directions
Add the lentils to a medium-sized sauce pan, add water and bring to a boil.
Add half of the sliced onion, and salt, pepper, turmeric and red chili powder.
Once the water comes to a boil, turn the heat down to low, cover the pot and leave it undisturbed for forty minutes.
30 minutes in, start to get the tempered spices ("tadka&quot ready. Heat vegetable oil in a saucepan and add onions. Fry the onions on medium heat till they are medium brown. Add garlic to the saucepan and fry till medium brown. Add cumin seeds and dried red chilis. Fry for a few seconds.
Once the lentils are done, serve in a bowl. Top with tempered spices and oil.


With rice.

It’s the season.i have some but would have to do quite a bit of walking to get enough for a salad.

Siggi's vanilla yogurt(dairy free) with strawberries and a little stevia-it was the best yogurt I ever tasted and not overly sweet...we also had some rolled cookies with chocolate inside of them. The chicken sausages were Tuscan flavored and came from Whole foods who delivered an order today...didn't get the chicken breasts but I have some. These sausages are made at the store and are delicious. I cooked them with onions.

It turns out that I can't eat dairy (Lactose) as well as gluten...seems very unfair. Not crazy about non-dairy substitutes...I prefer dairy with the lactose removed.
