What's for Dinner, Tues., Apr. 7, 2020

Pork meatballs wrapped in zucchini and carrot strips. Very colorful!

Dessert: shortbread cookies and tea.

1. Dinner

Grilled chicken breast, roasted carrots and cauliflower and tossed salad. Strawberries for dessert.

2. Chicken Soup, buttered bread

3. Sambal oelek chicken thighs in the grill.

Jasmine rice. Asparagus salad with ginger sesame vinaigrette. Thinking about making lemon bars for desert but I might take a nap instead.

4. Blackened catfish fillets,

with a baked spiralized sweet potato.

garlic butter noodles, & a veggie. 😊👍

6. Pizza

The same sort of doctored-up pizza we have weekly when I was cooking for Dad & Sis. I feel kind of bad to phone in dinner like this when I haven't been cooking for them.

Anyway, it's a 3-meat pizza, to which I added garlic, bell pepper, onion and extra cheese.


Dessert is banana bread again.



I LOVE shortbread cookies! Something so simple, yet so wonderful.

Once when I was in the hospital, having a minor procedure, I had to stay overnight because my surgeon was "on call" and didn't start on me until late in the day. After I was "with it" enough and had an appetite, they gave me a sandwich, a bag of chips, and some Lorne Doones. I hadn't had those cookies in a LONG time... they made me so happy!
