What's for Dinner, Thurs., Apr. 16, 2020

The RG is making miniature pizzas with a variety of ingredients on them. Some will be white pizzas, others tomato sauce with ricotta and herbs.

I'm making little bowls of my microgreens to sprinkle over the pizza tops, too. I have broccoli sprouts, kale sprouts, and leek sprouts. I have other sprouts, but I don't think they would be good on pizza. Beet sprouts, for example. But they might be. It's not beet itself, after all. It's just the sprout.

Cucumber salad with red onion, sour cream, and dill.

Another salad of baby arugula greens with olive oil drizzled over them.

Dessert: triple chocolate chip cookies. Triple meaning three kinds of chocolate: chocolate chips, white chocolate and some other type of chocolate I can't remember. I made up another pot of spicy chai to go with the cookies after dinner.

So, unless I can schmooze someone into buying a cabbage for me, that corned beef will have to be banished to the freezer, for a while.

who brings me groceries one time a week. More than enough. Just make do with canned soup, salad, cheese, eggs and of course a few delicious pieces of dark chocolate.

6. Roasted salmon, and brussels sprouts

The sprouts will be tossed in olive oil, seasoned with sea salt and coarse-ground black pepper, and put on a sheet pan to get started. Then I'll season the salmon with some BBQ spice and add it to the pan so it's all done at the same time.

Followed by the usual dirty cajun martini and glass of cabernet

greens, and tomato) came from my local farm, ordered online and brought out to my car by a gentleman wearing a bandana mask. I will go out there this Saturday for more amazing fresh veggies. Please support your local family farmers in this if you can! It is a win-win.
