Related: About this forumSo what's for Sunday Dinner? Got my Carne Asada marinating ...
It's the Safeway pre-marinated flap meat from the butcher, but I like to add lots of my own touches ... lemon & lime juices, cumin, new mexico chili powder, ground coriander seed, pepper, with chopped fresh white onion, green onion, cilantro, and jalapeno. This is right before I roll 'em up and let sit for about 4 hours in the fridge.
BTW, I don't need to hear any anti-Onion propaganda from the POnut Gallery

(33,643 posts)Course, should you also have sauerkraut, swiss cheese, marbled rye, and stone-ground mustard on hand (or also delivered) ... I could see that plan working out okay.

Going on the Weber Kettle, over some real charcoal and a few oak chips for an extra bit of smoky goodness.
Then I'm making soft tacos with homemade chunky guac (with spices, tomatoes, onions and cilantro) and some homemade uber-hot sauce.

(8,203 posts)Flap meat is a great cut of beef. It is part of the belly, more specifically the inner oblique muscle, also known as sirloin tip...ideal for marinating and needs to be cooked quickly on high heat to medium rare...'cause the internet said so...
Love soft tacos..taco meat, with lettuce chopped, chopped tomato, refried beans, shredded cheese, and uber hot salsa..don't forget the sour cream....great make ahead fillings...

I do my soft tacos either street style (corn tortillas, raw onion and cilantro with some hot sauce) or on a flour tortilla with just chunky guac (avos, onion, tomato, jalapeno, and cilantro) and hot sauce.
For crispy tacos (usually ground beef) however I do lettuce, tomato, sour cream, and cheese on those.
I also prefer sour cream in burritos over guac.
I rarely use both for some reason, though I like both.

(8,203 posts)One of our favorite restaurants..Baja Joes..they make this crabmeat stuffed shrimp wrapped in bacon on a stick and fried..I forget what it is called...every Tuesday it was Taco Tues..$2.50..they are open..but - be a while..always Sunday morning Football on many screens..miss it..they make the best watermelon marguaritas..with sugar on the rim of course..be well -
we had green chile burgers on the grill last night (second time this week) and they were so good I could have them again.
who knows for tonight? getting too hot to think about cooking.

(33,643 posts)The grill is outside, and this thin meat takes like 2 mins/side ... then everything else is done inside where the AC is on 75F, so ...
I love green chilis on burgers (or grilled chicken breast sammies too)!

(33,643 posts)I only use for things that thighs don't really work for, like a chicken sandwich or cutlets that I'll bread and pan fry, to put on top of, say, an italian pasta dish. Or various stir-fry dishes where I want the chicken to just kinda be there for texture and protein along w/lots of veggies.
Otherwise, I'm definitely a thigh guy all the way ... GOTTA be grilled though. They pick up flavorings from spices, marinades (and the grill) ... SO MUCH BETTER than breasts do, and just taste better, for most things.

We are having Roast Chicken with baby golden potatoes and gravy. Salad (simple, lettuce, tomatoes, onions, carrot), vinaigrette.
Mug brownies for dessert.

(33,643 posts)Which is pretty much exactly what you just described. I make it very authentic ... red onion, roma tomatoes ... hell, I even have OG salad dressing in the bottle.
The rest sounds great too!

(33,643 posts)Then you need red onions, grated parmesan/romano, and of course their delicious dressing. The store-version is very passable in that regard, not quite as good as at the restaurant, but close. There's likely some taste-alike recipes on the web, but I'm quite sure you'd need to make it well in advance for it to taste right. It also involves egg yolk to make it right, FYI. OG probably gets those pasteurized.
Oh, and some decent croutons ... NOT the strong herb-flavored kind though, something relatively plain is best. Parmesan flavor works good.
Butter lettuce is also called for but not critical.
The type of tomatoes is the least important part
Apart from the bread sticks there's only one other thing I really like at OG ... the Tuscan Kale Sausage soup ... is BOMB.
Needless to say 'Soup Salad Breadsticks' is all I ever order there.

I have it in my mind now and I have to at least attempt something a little more adventurous than the salad dressing I was making.
You've definitely inspired me to go a little above and beyond tonight, thanks.

Also, key to any salad dressing ... it takes like a day for it to taste it's best. Always. Any kind you make (apart from just vinegar and oil).

(33,643 posts)Whenever I grill ribs, applesauce is a required side dish. I also put apple juice in the foil wrap for the 'crutch' portion of the cooking. AND I use applewood chunks for smoke most of the time (sometimes hickory).
Love mashed potatoes and gravy, and broccoli & yellow squash.
And CC Cookies, of course

(1,706 posts)which my son made - he cut back on the ginger but not the chili - very good but my lips are still burning. I steamed some spinach and dressed it with toasted sesame oil and tamari. To wash it down, a Dorothy's New World Lager from Toppling Goliath Brewing of Decorah, Iowa.

I'm thinking Bai Krapow (Thai Holy) Basil would be stellar in that ... if you can find it.

A local restaurant calls it the Country Bowl & it's always 2 meals. We've been doing more take-out, trying to help our local restaurants stay in business.

Side of Arugula Watermelon salad with my lemon vinaigrette dressing.
Homemade Giza Culture Sourdough bread, slow rise in the refrigerator.
Dessert was Snickerdoodle loaf with homemade vanilla sauce.
And I fixed the garage door.
Very productive day.
