Pan-fried trout with toasted pignolis and crispy fried parsnip chips. The parsnip chips make the "scales" on the fish;, i.e., they overlap until the end of the fish! Another RG original
And for a vegetable, I am getting a turnip!! Yep, sliced turnips, along with steamed broccoli rabe from my garden.
Dessert: low-sugar coconut cream pie, made by me but using a store-bought crust. I made the filling by making my own vanilla pudding, then I folded in whipped cream, and topped it with toasted coconut and almonds.
Ginger tea to go with.

(13,574 posts)It was really good. The beans are part of my meat rationing effort. Not as good as good taco meat, but way better than canned.
Later just half a broiled chicken breast and some coleslaw.
I've never made them but I love them; can you tell a little bit about how you did them? Cooked in slow cooker? How did you mash them up? And what type of beans?
We don't make Mexican very often. When I hang around my brother, though, we like to have Mexican food.

(13,574 posts)masher gets it done easily fairly quickly. I was ready to throw it in my food processor if it was hard at all, but it was obvious it wouldn't even be worth the effort of cleaning that out. I'd say this needs at least a teaspoon of salt. The recipe doesn't call for that. I go light on salt anyway and I doubt a tsp is too much for about anyone.
I used just pinto beans but may throw in some chickpeas or black beans next time.

(38,553 posts)braised like a pot roast in the slow cooker w/ potatoes, carrots, onion, garlic and rosemary. I'll add some green beans in the last 30 minutes.
for dessert, we still have the homemade strawberry ice cream.
