Today is ratatouille day.

I’m making a big batch to use up my late summer garden vegetables. We’ll eat some today and tomorrow, and I’ll freeze the rest.

No set recipe, exactly. But in this vegetable stew type dish I have included

2 chopped medium onions
2 minced garlic cloves
a few ribs of chopped celery
2 eggplants, cubed
1 zucchini, cubed
1 chopped red bell pepper
1 chopped yellow bell pepper
A box of chopped crimini mushrooms
About 12 (?) I didn’t count ... chopped and skinned Roma tomatoes
Basil, oregano, fresh parsley

I’ll sprinkle Parmesan cheese on top, some ripe olives, too, before serving, with a thick slab of garlic bread.

Today is Mr. Ohiogal’s birthday as well, although we’ll celebrate it tomorrow when all my boys will be over for dinner.

Why do you skin the Roma tomatoes? I use Roma's for everything and never thought of skinning them. Also, is it time consuming?

I just don’t like hunks of tomato skin in it, but I suppose that’s just my personal preference.

I boil a pot of water, core the tomato, score an x in the bottom of the tomato, and immerse it in the boiling water for about one minute... the skin peels right off. So it is an extra step, but not too time consuming.
