For lunch we had ramen with eggs, tofu, mushrooms, garlic, shallot, and strips of nori with miso broth.

Kids love lunch at home during virtual learning.

Brownies in the oven now.

vanilla cake (substituting greek yogurt for the eggs and unsweetened apple sauce for the oil) lightly dusted with confectioner's sugar. The cake doesn't rise quite as much, but it a very tender, moist crumb.

Grilled sirloin tips served over Boston Bibb lettuce with Ciabatta bread and butter.

Capellini with olive oil, garlic, capers and a splash of white wine.

Cucumber salad with tomatoes and thin slices of Spanish onion.

Dark chocolate with a glass of red wine for dessert.

Meatless Monday, so rice & bean stuffed poblano pepper; and this one is the hottest one I've ever had.

Decafe peach tea, lots.

9. Leftovers

TJ and FLFC have settled into a different sleep schedule than me. I did yard work today into the evening so no cooking was done this evening and I'm dining alone.

I had beef soup from yesterday and added some leftover brown lentils. Cucumber and tomato on sourdough bread with a dab of mayo as a side.

I fed FLFC earlier today with baked chicken leg (he told me it is barely edible it it doesn't have the skin) and some of his leftover mini-burger. He had a couple of fake bacon treats for dessert.
