If I get energetic enough I may cook up a couple of egg rolls out of the freezer.

I cook the pork with minced ginger, garlic and sweet soy sauce. Boil up some rice noodles and drain and stir fry with chopped green onions, red bell peppers, baby carrots, straw mushrooms, large handful of bird peppers.
Makes about 3 days worth of eating.

My mouth was visibly watering as I read your post.

Hmph. Well, seeing that I'm not invited for a dinner of spicy fried noodles, I think I'll do an elaborate salad tonight. I'm going to make my tofu in orange sauce with toasted sesame. And I have fresh asparagus that I will roast and put in the salad.

Our primary election was yesterday and we both work at our polling place. The salads are leftover from our dinner there. I have a sore throat, I thought was from talking so much, but no...it is definitely a cold .

we've been short-staffed a bit and a couple deadlines coming up, so i may wind up going in for a bit today (supposed to be my day off). if i do go in, it'll probably be sandwiches again. if not, i've got some salmon fillets i picked up yesterday, but i'm not quite sure what i'll do with it yet.

so I can slice the leftovers for deli meat for sandwiches, and another huge salad with lots of cucumbers, and a side of ... stuffed cucumbers! My cucumber ice cream from last night froze too hard. I can't scoop it out so now I'm trying to thaw that so I can either serve it for dessert or refreeze it maybe with more vodka or something in it to keep it slushier.
