1. Hubby comes from Texas

And he was very familiar with the sweet, syrupy, marshmallow-topped sweet potato casserole. Neither he nor I have much of a sweet tooth, so we never liked that type of recipe. But last year, he developed this really interesting idea for a "responsible" sweet potato casserole, and it is absolutely delicious.

Also, both of those recipes look really nice, and I'd eat'em for sure.

Now, I've got "responsible" in quotes there because, while it has a LOT less sugar, it does still have a bunch of butter in it. It is also packed with a huge amount of flavour:
