What's for Dinner, Thurs., Nov. 19, 2020

Pork and cannellinis with cornbread.

I made a salad with pomegranate seeds, toasted sesame seeds, chopped dates, ruffly green and red leaf lettuce. The dressing was made with pomegranate molasses and pom juice. Olive oil, of course, and a little sweetener. Here's a pic:



Dessert: The RG made orange sauce for the bread pudding. Bread pudding is the greatest fall dessert, aside from apple tarts.

Ginger tea.

A bed of Romaine with lots of goodies on top: sliced carrots, thin red onion rings, sliced pimento-stuffed olives, cherry tomatoes, slices of celery and half-rounds of cucumber. Balsamic vinaigrette and slices of seared tuna will top it off.

Fresh Ciabata bread with garlic & olive oil on the side.

Mixed fruits and brandy for dessert.

Using up things

First course:

Jarred herring & onion in wine
served with thin rye toast, sour cream, and banana pepper rings.

Lots of options for further courses of leftovers/use me ups
Salad veggies, pasta casserole, baked chicken, meatballs (hot sausage & cheese I think), and more.

This may take a while ...

FLFC has not lobbied me for dinner yet. He seems to do better with small meals. He has snacked all day on everything from Steak-Umms to chicken tenders as well as the usual Temptations and fake bacon treats. We are trying to push calories to keep his weight up. We have much less concern about the quality of his diet now.

I make a smoothie every day with pomegranate seeds (and other fruit) and bread pudding is just about the best dessert, after creme brulee, that is. Fun to make and you don't have to travel to New Orleans.
