Cooking most of the night.

My little brother is getting hitched tomorrow and wants me to cook for the reception. 40 lb of Smoked brisket and 15 lb of my homemade sausage. Started the brisket at 3pm, will slow cook and mesquite smoke till 1am, then wrap in foil, put back on the pit and damper the fire down to 150 deg.. Let it sit there till morning, then unwrap, slice and pan, cover with foil and back on the pit to hold till 2pm. Resuscitate the fire and cook sausage, slice and pan, cover and put in pit to hold.

Gonna be a great reception! Good food and happy people!

Maybe 2lb of brisket left, no sausage! Had some of my BIL's kinfolk in from Holland and I believe that they ate half of it! Never seen or heard of smoked brisket before, but smelled it as soon as they came in! Wanted to know what that flavor in the meat was. When I told them it was mesquite smoked for 12 hours they wanted to know why so long. I don't speak Dutch, and their english wasn't so good, but I managed to get the idea across!
All had a great time, little brother and new bride are off to a Caribbean cruise.
Everything is cleaned up, put up, and all are home.

Edit to add: Not everything is cleaned up. Got to clean the pit tomorrow!
