Welcome to Hey Chef, a series where we ask pros around the country for tips on how to use ingredients we love. Today, let's funk things up with fish sauce.

Once you start using fish sauce, it can be tough to stop yourself from tossing it into everything. Made from salted and feremented anchovy juice, the umami-bomb effect of this Southeast Asian condiment is unparalleled, and plenty of chefs have told me they "use it like salt."

Get a shrimp-flavored instant ramen (I buy Maruchan Yakisoba Noodles) meal... add half a handful of slivered green onions and a bit of minced garlic and a tiny bit of ginger before microwaving. After it's been microwaved, mix in the flavoring packet, and then add a few splashes of fish sauce. Easiest and cheapest thing on Earth, but it tastes fantastic.

a filipino dish, its wonderful the amount of extra flavor its adds to this dish.

I've had very little Filipino food and I really want to try. Since I can't seem to find any locally, I may eventually give a shot at making Chicken Adobo myself. It looks sooooooo good.
