What is Japanese Strawberry Shortcake?

One of the surprises I found in Japan was the astounding bakeries. If not for some uniquely Japanese flavors like mugwort, you could take them for a European bakery.

As far as this recipe goes, if you’re not planning to serve it instantly after making it, I’d stabilize the whipped cream with gelatin.
