Convection oven help?
I have a convention oven thats relatively new. Im really struggling with it. I follow recommendations about reducing cook time and learned that I cant cover stuff if I want it to cook properly. But, now holiday baking is here and Im so confused. My bread pudding, started it at half the time and kept an eye on it - hard as a rock on the outside and wet in the center with the backside darker than the front. I set a timer now to rotate cornbread, etc., so both sides of the top cook evenly, but still almost always have a soggy center.
Now a favorite-cranberry orange loaf - first attempt in bread pan, terrible. Brown on the outside and literally watery and wobbly inside. I went to take it out and it wiggles like jello.
Chicken breasts, steak fries, frozen pizzas, all cook up just fine. Its just baked goods. 🤷🏻♀️
Advice, before I go get another damn oven?

I made walnut "Parmesan" cheese today
Put it on some veggie pasta. Its not cheese, but has its own flavor and I like it. Especially with the roasted tomatoes in my sauce.
I havent tackled vegan cheese yet. The disgusting mess that was my oat milk attempt is holding me back. What recipes do you guys like for different vegan cheese?
Question about an ad
Im getting an overpowering iPhone/YouTube ad that takes over DU completely on the homepage and after a click or two internally when I type in another DU page link. Anyone else having this problem or know how to navigate around it?
Sourdough
Ive tried two different recipes to get my sourdough going. Both were spectacular failures. 🙄 anyone have a starter recipe theyve had luck with that they could share?

I wonder if it would taste better as chocolate milk? 🤨
Its cheaper than buying it but wow making it was messy. My daughters guinea pig loved the pulp though. I dried it overnight and broke it up with her breakfast.
Any tips for making it more tasty?
How to find in-home help for dad?
Hes still doing what he wants at nearly 90. Mowing, cleaning, cooking... hes a fantastic driver and until my mom died last year, was mentally at about 95%, just forgot a few things occasionally. In the last year, hes started forgetting things, losing words and names, the normal senior stuff. He recognizes it and has me go over important papers and bills.
He was on the roof last week cleaning gutters and sealing his screened in porch roof. 🙄 Told me later that night. But Ive decided that if he keels over mowing his lawn, painting his cabin or falls off a roof then hes gone on his own terms doing what makes him happy.
We arent to the point of needing help yet, but I am researching and unless he has a catastrophic fall, I plan to keep him in his home as long as I can. We may move in, if needed. Its the least I can do for the grumpy old bastard.
So, who has used the big national in-home companies? Any recommendations or places to steer away from? My aunt was in a Catholic facility (and it didnt burn down with the Baptist moving in) and I want him to be there if worst comes to worst. (At nearly 90, I see being in a home worse than death and he does, too.)

Tuna Steaks
At the risk of, as in other forums when I ask for a recommendation and get sarcastically told how the google works... lol ... I wanted to ask if anyone has a recipe rec for Tuna Steaks.
- we eat too much beef (Kansas loves cow), and Im just learning how to fix non-shellfish seafood.
- Ive literally never had tuna that didnt come in a can. And I hate the stuff in the can.
So, any good place to start? We have a rice pilaf with garlic and spinach, a salad with homemade honey mustard dressing and steamed asparagus with Parmesan on the menu plan for tonight with it, if that helps.
Thanks in advance. Im looking at these things in my fridge and some recipes on Pinterest and Im at a loss.
