82. I went with stuffing, but my absolute favorite was my late dad's turkey.

I know this will probably horrify all of the food safety people, but my dad always made the best turkey on the planet. He'd make a big bunch of stuffing using stale bread that he'd made himself & added lots of onions, celery & sage from our garden. He'd make a turkey broth using the giblets & neck plus a few chicken parts, along with celery & onions, adding a generous amount of butter at the end. Then he'd stuff it in the bird & all around it. He'd then cover the roasting pan with a tight-fitting lid and put it in the oven set to 180F or so at about midnight or 1 a.m. the night before Thanksgiving. The best thing about Thanksgiving was waking up to that heavenly aroma. About an hour before dinner, he'd remove the lid, baste the turkey with butter and up the temp to 375F or so to brown the turkey & the stuffing. I've never been able to duplicate it. In all of the 40 Thanksgivings I can remember, nobody ever got sick.
