The recipe at Le Google I liked the best used grated apples (for the pectin) with the grated carrots.

Once you get the chemistry somewhere else, use your own spices and frosting.

That's why I suggested Le Google. That's where you find tested recipes for the cake so you don't lose time and money experimenting with sbstitutions that can throw baking chemistry off.
