Most beef is treated with carbon monoxide to keep it that lovely shade of red and humans evolved to eat and digest all manner of non-nutritious garbage that just filled the stomach between meals that had nutritious content. Ammonia is widely used in the food and drink industry and, like many other compounds, is safe at low levels.

While I'd prefer to not eat something made from "pink slime," since that it's apparently no less safe than eating high-fat beef, I don't think it's necessary to freak out about it.
