An animal cannot give consent, informed or otherwise.
As for the demand, or rather the lack of demand- that's something that could very easily change as population demographics and social mores change(just like with Gay Marriage). I don't see any reason why 3 people cannot be involved in a committed relationship, and in fact there are probably more people living with just such an arrangement than you might realize.
Like the song in Multiplication Rock said: "Three is a Magic Number"...
And although I support the idea of "triple unions" I don't think that it should go beyond 3 as an allowable number in a legally recognized and binding relationship.
