grandmother who lived quite simply.
When it came time to feed her family of fifteen children, or some guests, she went out, got a couple of chickend from her stash, struggled with the chicken, placed it on a chopping block,(a tree stump) and cut it's head off, in one fell swoop with a mighty blow from her hand axe.
After this assault, the chicken then, proceeded to run around the area with it's head cut off for several minutes. I know this because I watched her do this and I watched the death throes of the chickens.
I also fed those chickens as part of my chores, so I was deserving of the resulting meal as any.
The next step, after plucking the feathers, was to singe the pin feathers off the chicken over the kitchen stove flame, and then, dismember it and put it into a pot and cook it. It tasted and also smelled good, however she made it. I don't recall any fancy herbs being put in there like lemon grass from foreign countries or even a lemon, scarce at the time to regular folks.
Obviously a skilled butcher and a skilled cook.
