You'll need this: http://winpt.sourceforge.net/en (Or http://www.gnupg.org if you use Linux) And this: http://enigmail.mozdev.org plus Mozilla or Thunderbird as an e-mail reader. Learn how to use it. Mostly for signatures, though. The only time I use it for encryption is passing passwords around for login accounts.
I just don't do anything that would truly be of interest to law enforcement. Others might (e.g. protests).

Just by using encryption you're sticking out like a sore thumb to anyone who's looking. Until millions of people start encrypting their email, it has potential to do more harm than good to an innocent individual.
I'm not optimistic. PGP has been free and available for all platforms since 1991. It (or variants) have long been integrated with most of the popular email packages. Granted, early on you needed to be something of a techie to use it properly, but it's a one-click job now and has been for years. Still very, very few people use it.
But I do second your call.
