Church Polling Places and accuracy in count

This is an issue that has been gnawing at my gut lately. Has anyone filled at a vote ballot at a church who counts the votes and how can you make sure that thrre is no tampering going on. I mean if these people wont dispens birth control pill at pharmicies can you trust thier counts to be accurate?
