1. No milk?
If you have some add a little to the eggs. Use butter in the pan if you have any. Add some hot pepper sauce.

2. Do you have any basil?
That would be good sprinkled in.

My favorite is green onion, and mushroom.

But if all you have is cheese and eggs, looks like you might be having a cheese omelet. :D

3. How to make a good omelet
Eggs, cheese, then close your eyes, and toss in the first three things you grab in the kitchen.

Yum!

4. If that's all you have, that's what you use
If it is just you, use three or four eggs depending on how hungry you are and put the cheese in as the eggs are setting up. If you have any seasonings, use some to your taste.

7. Your options are limited.
If you really have only cheese and eggs, it seems to me you've answered your own question?
Cheese omelet.
Unless you have a few shrimp tucked away.
Or some smoked yak.
;-)

9. Heat pan, crack eggs over, cook, add cheese

Quick question, quick answer

Grind a fuckload of black pepper in there, and slather with hot sauce when you're done.

10. Add a tablespoon of cold water when beating the eggs
This will make them cook up fluffier and don't add any salt until it's on the table. Also, add mushrooms and onions sauteed in butter.

11. well
My basic recipe is: put eggs, a shot of milk and all cheese (grated/ cut into small pieces) left in the fridge into a bowl. Add something hot, pepper and salt. Then stir until you have a somewhat homogeneous mixture.
Should you have any, include something green (black olives or mushrooms will do as well). Shrimps or ham are never a mistake either.
Fry the mixture with lots of butter and enjoy.
