This recipe calls for the salami-style chorizo from Spain:

2 tablespoons butter
1 teaspoon sugar
4 eggs
Chorizo (salami-style) or cheddar sausage
2-4 pepperoncinis
(optional-shredded cheese)
Whip the sugar into the butter and place in a cast-iron skillet. Set the heat to the second-highest setting. Chop the Chorizo (or sausage) and pepperoncinis. (You can substitute bell peppers for pepperoncinis.)
As the sugar caramelizes, it turns brown and leaves a clumpy residue. When all the sugar has turned, put in the eggs. Pepper the tops liberally. Wait 45 seconds to a minute and toss in the meat, peppers and cheese. Flip everything at once so the meat and veggies are underneath the over-easy eggs. Cook an additional minute and eat hot.
