Potato soup problem.
I made potato soup but the potatoes all dissolved. I used small red potatoes. It tastes great but I had to add broccoli so there was something to chew once in a while (along with the ham).

1. how long did you cook it?
Sounds like they disintegrated.
I saute the potatoes first, to get a little crust on them before adding the liquid.

2. Every potato soup I ever made was supposed to be like that
but you can get some fresh potatos and add them and cook for about 30 minutes, then remove from the heat if you want chunks of potato in it.

6. Um...uh
they have different potatoes in Ireland that don't disintegrate in soup. Yeah...that's it!

7. Try using White Potatoes next time
They 'are more solid'.

For example, I have an old old (wonderful) family recipe for potato pancakes. Use MUST use red potatoes. First time that I personally made the recipe, I used white potatoes and got a terrible result. (Mom forgot to tell me that lil detail that the TYPE of potatoe makes a BIG difference).

Good luck w/your next batch of soup! Although creamy potato broccoli (with ham) sounds really yummy!

10. That's what my mom called stewed potatos
...and it's one of my favorite things she used to make. Still makes when I go visit.
