5. I fail when it comes to home-grilled...
I can never get my burgers to taste the way the best restaurant/diner ones do. I don't get it!!! What am I missing? I've tried every version of ground beef. Even when I have use of my uncle's $3000 grill---it ain't the same. What's the friggin' secret???

7. Secrets
1) Mix in about a tablespoon of worcestershire sauce per lb. of meat, then add a pinch of salt and garlic powder. Some like minced red or white onion and others even add an egg. I forsake both egg and onion.
2) Form the patties ahead of time, then place them in the freezer maybe an hour or so to firm up. Use wax paper to separate them on the plate or platter and cover with plastic to prevent any absorbtion of freezer flavor.
3) If you're using charcoal, don't place them on the grill until the briquettes or chunks start to ash a bit around the edges. The coals should be a prominent reddish-orange with an ash around the edges. Then, place them on the grill. Over a medium-high heat, turn over at 5-7 minutes, depending upon preference. Only turn once. To cut back on error, use a grill basket. I bought two this season and they were well worth the combined $14 for them.
4) When each side has been grilled, plate 'em. The maximum cooking time should be between 12-20 minutes, depending upon consistencey desired and fire temperature.
5) If you have any leftovers, make chili.

3. I'll go home-grilled too
Slightly rare, ground sirloin with my own barbecue sauce, mustard and mayo. Cheese on top of course. Maybe a little A1. Numnumnumnum

8. Boca
I'm a confirmed carnivore and I LOVE Boca's. Garden Burger grilled style is good too.

9. Mmmm
Like them, too -- especially the Boca brand and Morningstar Farms. The classic Gardenburger has its own unique flavor, one that I love not as a substitute for dead animals but just 'cos it tastes so darned good.

Still haven't had a palatable (indeed, barely had an edible) tempeh burger, though...
