I was hanging out in the parking lot behind Madam Wong's nightclub in Santa Monica, way too long ago to remember the date, and we (me and the guy who worked the backdoor) were burning a big fatty. One of the bands showed up, and we passed the joint around. The singer was this clean cut little kid, short hair, really squeaky, and looking kind of nervous. We bullshitted for a bit, and the band went in to get ready for their gig.
Turns out the squeaky clean singer was a very young Anthony Kiedis, and the band was the Chilli Peppers (well before they made a name for themselves outside of LA).
He looks nothing like he did then. It's weird what fame, money, hard drugs and rock and roll will do to your skin tone.

Doesn't exactly tip the Scoville scale (only about 15,000), but these chiles have the most incredible depth of flavor. Anybody who likes Middle Eastern food knows the distinctive tang and richness of the aleppo.
Of course, I love all manner of chiles, from the mildness of Anaheims to the searing heat of the habanero. They all vary as much in flavor as they do in heat.
But nothing beats a nice, spicy Turkish lamb kebab, with loads of aleppo.

Without which I could not enjoy nachos, one of my favorite snack foods.
But any pepper is good! Except scotch bonnet/habanero. I just don't like that citrusy under-taste. I can't put my finger on exactly what it is, but something about the flavor I do not like.

It's a chipotle sauce. Since it came out, I've been using it like most people use ketchup. Outstanding flavor, and mild enough that you can pretty much drench everything with it!

I love all of the above; I'm a big fan of all peppers, hot and sweet. But this one needs a mention on the list! Mild when green, fiery when red, used for chile, for rellenos, hanging in ristras around the southwest.
