Okay, the reheating toughened up the crawfish a bit. But I made a damn good jambalaya on Sunday, and am finishing it up tonight.

That's right, you said the meat got tougher... But I suggest trying it; if it doesn't improve the flavor, then, um, you've learned that even I can be wrong, on occasion.
