What shall I name this fine meal?

What shall I name this fine meal?

First, my girlfriend invented an incredible sauce tonight:

Honey Basting Sauce
4-5 Tbsp. Honey
1-2 Tbsp. Mustard powder
1/2 stick unsalted room-temperature butter


Stir the ingredients together in a mixing bowl to taste. You won't believe how good it is.

We have no idea what to name the following meal, which is now ready to devour.

One double-thickness Tenderloin steak, 1-1/2 lbs.
8-10 slices smoked bacon
2 slices smoked bacon, chopped
One whole shallot, chopped
2/3 bulb garlic, finely minced
1/3 bulb garlic, chopped
12 oz. Brown Ale

Assemble the mise en place.

In a mixing bowl, stir the honey, mustard powder and butter until whipped.

Using a paring knife, cut dozens of holes in both sides of the roast, twisting the knife to open them wide. Stuff the chopped shallots, chopped garlic and chopped bacon into the holes on both sides. Smear the minced garlic on both sides. Top with all remaining chopped garlic and shallots.

Drape the bacon slices over the meat from one end to the other. Carefully turn the meat and fold the strips across the center. Place in pan and top with half the honey-mustard-butter sauce. Pour in the brown ale to a depth of 1 inch. Place remaining chopped bacon around sides. Bake at 300-350 for 2 hours, turning midway through and basting with additional honey-mustard-butter sauce (and beer) as needed.

What would you call it?

We served it with a homemade potato salad with fresh sweet basil from our garden, and it was fucking superb! I'll post a pic of the dish fresh from the oven after the camera charges up.

Leaning toward DS1's name. It's either that or Mustard Honey Roast.

The meat and sauce was based loosely on a recipe from the historical novel "The Physician" by Noah Gordon. The original recipe calls for venison.

6. It sounds wonderful, but I have a couple questions...
is that a tenderloin *steak* or a whole tenderloin, more like a roast? when yo uroast it like that, is it well done? Asking because I like min R to MR.

11. It was an unsliced tenderloin, like a roast, 2 inches thich
We cooked it until it was done. If you like R to MR, I'd recommend cooking it only 80 minutes.

My tongue is still in heaven. The bacon was unsurpassed.
