I'm Making a Mexican Dinner Tonight..... |

I'm planning on making chicken fajitas and mexican rice with these ingredients tonight:
6 chicken tenders One large yellow onion (completely diced) Four tomatoes (completely diced) 2 sliced limes arranged over chicken while marinating Lemon pepper Salt Pepper Flour tortillas
For the rice: Chopped tomatoes Salsa verde to give it that green delicious and spicy taste
I'm marinating the chicken for three hours before dinnertime, with a little bit of olive oil slathered over the chicken tenders, lemon slices all over the chicken, lemon pepper and salt and pepper.
The large yellow onion will be diced thoroughly along with the four tomatoes as the raw ingredients to top the chicken fajitas.
Stir fry the chicken on the stove in a skillet until completely cooked through.
As for the rice, I'd put a little bit of olive oil on the rice to make it more translucent, add the salsa verde (which is really a green tomatillo sauce), and stir thoroughly until the salsa verde disappears. Add the chopped tomatoes, and put in water. Let the rice cook for a full twenty minutes.
Prepare the tortillas by heating them up in a small skillet, one tortilla at a time. Remove from heat. Add the chicken, the raw onions and tomatoes. Add a little bit of salsa verde for a spicier kick if you're in the mood.
Add the delicious rice to your plates, and top with chicken fajitas!

guacamole, sour cream, lettuce & tomatoes-I also open a can of refried beans and mix them with a little salsa when I do dishes like this- Sounds great!

I can't improve on your recipe too much. But, I'd probably chop up a jalapeno to add to the chicken fajita. If my guests aren't keen on the jalapeno, I might go with poblano. Or, as a last resort, bell pepper. If you go with bell pepper, get a couple different colors.

so I'm on a tight budget here :-) I wanted to get the bell peppers but I didn't want to go over $45 bucks for my groceries. At least I got pesto sauce, bowtie pasta, garlic, butter, basil, rosemary, new baby potatoes, velveeta pasta (better than kraft mac and cheese), and turkey meat for sandwiches.

We marinade chicken breasts in tequila and lime and cilanto for a couple hours, then grill and slice. We slice and pan brown green peppers, pasilla peppers and onions.
Personally, I also like to do it Chipotle style, with pinto beans, and cilantro-lime rice, corn salsa, cheese and sour cream, and turn it into a burrito.
Sticking on the fajita line though, for separate rice, we usually make cilantro-lime rice, or sometimes Spanish rice, which my fiancee makes especially well.
Render some bacon. Saute an onion and some green pepper til soft. Add the rice and cook until lightly browned (it starts to smell a little burned, but that's a good thing:)). Add some canned tomatos, cover with chicken broth and cook til tender.

You can't cook chicken fajitas without cilantro! And some cayenne pepper in the marinade as well. Spice those babies up!
