Who has a good marinade recipe for steak? |

I'm using a combination of Montreal Steak grilling sauce, left over injectable creole butter (not injecting), and a store-bought garlic and herb marinade, with a few spices thrown in.
It's not too bad, but it's missing the proverbial "something."

3. Things go better with Coke. |

A tip I learned from a cook at a restaurant well known for their steaks and steak tips.
Whatever marinade you decide on, add a can of Coke to the mixture. It doesn't add any flavor. From what I understand it tenderizes the meat by breaking down the fat. I've tried it on numerous occasions and the difference is amazing.
Specific recipes...
I'm one of those 'measuring by eyeball and taste' cooks.
Sometimes it comes out perfect, other times, not so perfect.

from House of Tsang. It's great for almost any meat (even burgers) and when mixed with orange juice it's really amazing as a marinade for salmon.
Phenomenal stuff for stir fried vegetables and rice and even some pastas.
I barely cook without this stuff.

1 cup soy sauce 1 cup Pinapple Sauce 1 shot cheap tequila 1 tsp cumin 1 tsp new mexico chili powder 1/4 cup lime juice 1/4 cup Orange juice 1 minced clove of garlic
Soak overnight. Trust me, you won't be dissapointed.

Kitchen secret from chefs..if you like your steaks carmelized dark and it holds in all of the juice. Kitchen Bouquet is a browning and seasoning sauce made by HV in Oakland, CA

Use the store brand. I know it works for moose and caribou. I generally don't marinate steak, given that I don't buy it much, and it's a "treat".
Never had it fail yet. Good flavor, tenderizing, and doesn't overwhelm the meat.

And throw away the marinade. The ONLY reason one should EVER use marinade is to cover the taste of meat of an inferior cut or quality. Sirloin, ribeye, strip, and tenderloin need no marination.
