Watermelon pudding--- YUMMMMMMMM! |
|
Tony's Mom recipe:
2 1/2 lbs. watermelon cubes 1/4 cup sugar 1/4 cup cornstarch 1 tsp. orange-blossom water pinch of cinnamon 1-1/2 oz. bittersweet chocolate, cut into small pieces 2 tbsp. chopped pistachios
Cut watermelon into chunks, remove rind and seed. Put pieces in blender and drain off 2 cups of juice after blending. Combine juice, sugar and cornstarch in a saucepan and bring to a boil over high heat, stirring constantly. Let boil until cornstarch dissolves. When the mixture turns bright red, stir in orange-blossom water and cinnamon. Remove from heat and pour into sherbet cups. When it cools, stir in chocolate pieces and pistachios. Chill several hours and serve.
:D

7. Mediterranean or Middle-eastern food shops also carry it |

What a coincidence! I bought some just the other day for making Iranian candy (with ground almonds and icing sugar). Thanks for posting! I was wondering what to do with the rest of the bottle!

13. look for Persian pistachios! |
|
They're larger and more elongated than the type generally grown in California. Better flavour too. My Iranian friends got me hooked on them. (They should be right next to the orange-blossom water and sour cherry syrup.)
