Watermelon pudding--- YUMMMMMMMM!
Tony's Mom recipe:

2 1/2 lbs. watermelon cubes
1/4 cup sugar
1/4 cup cornstarch
1 tsp. orange-blossom water
pinch of cinnamon
1-1/2 oz. bittersweet chocolate, cut into small pieces
2 tbsp. chopped pistachios


Cut watermelon into chunks, remove rind and seed. Put pieces in blender and drain off 2 cups of juice after blending. Combine juice, sugar and cornstarch in a saucepan and bring to a boil over high heat, stirring constantly. Let boil until cornstarch dissolves. When the mixture turns bright red, stir in orange-blossom water and cinnamon. Remove from heat and pour into sherbet cups. When it cools, stir in chocolate pieces and pistachios. Chill several hours and serve.

What a coincidence! I bought some just the other day for making Iranian candy (with ground almonds and icing sugar). Thanks for posting! I was wondering what to do with the rest of the bottle!

13. look for Persian pistachios!
They're larger and more elongated than the type generally grown in California. Better flavour too. My Iranian friends got me hooked on them. (They should be right next to the orange-blossom water and sour cherry syrup.)

I just copied from the index card she wrote the recipe on for us. Try it--- it's DEE-licious on a hot summer evening.:)
