As a host, he's fine, I just happened to try one of his recipes and was most unhappy with the result (way too much garlic & parm).

I know little old ladies that put him to shame. Plus, to folks who were born and raised in Cajun country view this Yankee as a fake, just like Justin Wilson (who was from Mississippi and had a BAD, fake Cajun accent). Like Wilson, he is credited for revitalizing Creole-Acadian cooking... utter bullshit. In think it was around 1995 when Emeril took over the restaurant "Delmonico's" and it has sucked ever since.

near the Mississippi border (same as Mississippi to we Creole and Cajun folk). I lived in Tangipahoa for 6 years (school) and used to perform (music) at the Covington Country Club, many times for parties featuring Justin Wilson and his cooking. In real life, he had a Southern drawl, like most folks that live in these parts, but he NEVER was a Cajun according to Cajuns I know near the Lafayette area or even spoke like one (except in public). Originally an itinerant safety engineer, he often encountered Cajuns during his travels, and developed a talent for telling Cajun jokes and stories. He was a huckster, and a good one at that. His cooking was very good, but it wasn't as good as real Cajun cooking (just go to the Acadian Fest in Sept. and you'll know what I mean). He stole lots of recipes that he pilfered from Cajun folks and claimed they were his inventions. There's lots of sour grapes because of what he did, though his legend lives on in the minds of tourists and aficionados from afar.

He was not the same on camera as he was off. He was a businessman to the core.
He was born in Amite, LA, but he lived in Mississippi for several years before his death in 2001--he lived not very far from my home. He was my neighbor. :-(

Just because he seems like a phoney. However, in his defense, I really support his general way of cooking -- get good stuff, cook it enough so it is warm, then the favors will mix, then eat. Cooking is not that hard and everyone can learn how to do it.
Certain dishes are hard, but everyday cooking is easy if one knows the principles behind it. The principles are not hard to learn.

I have been to 3 of his restaurants, own 2 of his cookbooks, and back when I used to watch TV, his show was a "must see"
Who the hell are we to judge a man anyway? I remember they did a tribute show for his 1000th episode, the kind and heartfelt things his friends and co-workers (who have worked with him from the beginning,hint) had to say about him, his attitude,and his work ethic.
We should all be so lucky.

and that is he can't make a single dish without including dead animal parts. i remember he did a "vegetarian" episode once and it was just barely, barely vegetarian. vegetarian in name only, not in spirit.
