Now, before you say "Squirrel" and giggle at how clever you are.... I mean realistically. I say hot-dogs.

78. Hashbrowns...
Edited on Sat Jul-17-04 04:23 AM by RoyGBiv
I say that merely because on a road trip I took a few years ago outside the South, I stopped in a breakfast place and ordered hash-browns. I figured, ya know, since they were on the menu and all, I'd get some.

But, no. I didn't get hash-browns. I got home fries. HOME FRIES ARE NOT HASH-BROWNS!!!! Freakin' little ball bearings passing themselves off as potato bits is what I got, dammit. (Okay, sorry, I feel better.)

After traveling all over the Nawth, I realized no one north of the Tennessee River seemed to understand what hash-browns were, and I concluded this must be a Southern/Redneck thing.

And grits...good grits, prepared correctly, are yummy, and I've never met a non-redneck type person who knows how to make them.

Pork skins were a redneck thing, but they're an acceptable snack on the Atkins diet now.

85. Guy walks into a store
and asks for an RC and a moonpie. The clerks says "You must be from Alabama" The guy says he resents that assumption. "If I asked for pizza would you think I was from Italy? If I asked for a eggroll would you think I was from China?" No, the clerk replies, none of those things had ever happened. "Then why," the guy asks, "do you think I'm from Alabama just because I asked for an RC and a moonpie?"
"Cause, son," the clerk replies, "this is a hardware store."

I'm impressed that you know and CAN suck the head. Last time I did that in front of a girl from California she puked... ha ha ha!

100. Yep, and I'm glad they don't always like our food - more for us!
I keep telling folks that New Orleans is NOT the "South." This is a caribbean city. We eat critters that even the Southern rednecks don't eat, but we also eat what they do, though there's a tendency to add lots of spices, red peppers, etc. in a big pot with all the critters thrown in together. I'd also say that Southern folks in general who live on the Gulf Coast eat a lot more slimy critters than the land-locked folks.

I was shipped off to live with my 100% pure red-neck father for 3 months when I was 15; the only significant contact we ever had. Some other foods big on the redneck menu:

Spaghetti: noodles and hot tomato juice with a few seasonings.

Fried venison
Fried crappie
Fried liver & onions
Fried chicken
Baked beans with sliced hotdogs and onions.
Navy beans and smoked hamhocks
Fried and smoked ham.

Veggies included:

Canned corn and greenbeans
Fried squash
Fried okra
Fried potatoes
greens

Oh, and breakfast...fried eggs and bacon (or fried ham).

And lots of cornbread.

Did I mention that everything was fried?

Chickenfried steak was usually cheap, tough round steak. But they'd chicken fry top sirloin, too.

Up north it's referred to as "soul food," and is marketed in black neighborhoods. I'm thinking of all those soul food restaraunts near Garfield park in Chicago.

In the South, it's referred to as "dinner" by people of all races.

Man, I'd sell my soul to the devil for a taste of ganddad's cooking right now: collard greens, fried okra, black-eyed peas...

I have a few close friends who are rednecks. And, if I still ate meat (been a veggie since '93), I'd probably indulge in a little CFS now and then. first you move into a trailer, then you get some crescent roll dough, slice a weenie, put a wedge of chedder cheese in the weenie, wrap the weenie in the crescent roll dough and bake it. While its baking you take dry macaroni and make some art. Dry beans will work in case the gub'ment ran out of gub'ment macaroni. Good eats in any republican household.

36. Sweet Sorghum Molasses
When I was a kid in Arkansas I remember everyone having sweet sorghum molasses on their hotcakes for breakfast. They also would put sorghum syrup on slices of corn bread. Real molasses is made with cane sugar. But sorghum is a poor man's molasses, made with a type of grass. But it's very sweet and tasty and I prefer it even to maple syrup. And I love the way the word "sorghum" rolls off the tongue in a southern accent: "sohgm". But maybe I should note that not all the southerners I grew up around were ones I would call "rednecks", although many of them were.

67. Here's a recipe:
Recipe By : Texas on the Halfshell ISBN: 0-385-17904-9

2 pounds bull testicles*
1 cup flour
1/4 cup cornmeal
1 cup red wine
salt
black pepper
garlic powder
Louisiana Hot Sauce
cooking oil**

*aka: calf fries, Rocky Mountain Oysters (sheep or turkey testicles may be used also)

** pure hog lard is the best, but a mixture of 60% peanut oil and 40% vegetable oil will do

With a very sharp knife, split the tough skin-like muscle that surrounds each "oyster." Remove the skin. Set "oysters" into a pan with enough salt water to cover them for one hour (this takes out some of the blood). Drain. Transfer "oysters" to large pot. Add enough water to float "oysters" and a generous tablespoon of vinegar. Parboil, drain and rinse. Let cool and slice each "oyster" into 1/4 inch thick ovals. Sprinkle salt and pepper on both sides of sliced "oyster" to taste.

Mix flour, cornmeal and some garlic powder to taste in a bowl. Roll each "oyster" slice into this dry mixture. Dip into milk. Dip into dry mixture. Dip into wine quicky (you may repeat the procedure if a thicker crust is desired). Place each "oyster" into hot cooking oil.

Add Louisiana Hot Sauce to cooking oil (go wild with it, buy watch out for repercussions -- hot splashes). Cook until golden brown or tender, and remove with a wire mesh strainer (the longer they cook, the tougher they get).

Serve in one of those cardboard beer cartons that four six packs come in, layered with paper towels. Eat 'em, don't wait for nothin'! Chase with beer.

Variations include serving cooked "oysters" on a real oyster half shell with a sprig of parsley and a few drops of lemon juice.

48. Redneck haute cuisine: Frito Pie
1) Nuke one of those single-serving pop-top containers of chili.

2) Open bag of Fritos.

3) Pour chili directly into bag.

4) Enjoy (?)

There are also highfalutin' recipes out there, involving embellishments like cheese, and even the use of an oven,

http://www.texascooking.com/recipes/fritopie.htm

but at this point we have crossed out of the realm of the redneck.

63. Anything called "soul food" is just Southern cooking
Up north it's referred to as "soul food," and is marketed in black neighborhoods. I'm thinking of all those soul food restaraunts near Garfield park in Chicago.

In the South, it's referred to as "dinner" by people of all races.

Plicked eggs are usually found in fish & chip shops, and my local beer festical has a pickled egg stall. And yes you can get them in pubs if you are so inclined.

But seriously, pickled eggs are to be avoided unless you want the ultimate in flatulence.

As to redneck food, anyone for beef jerky?

87. Well, let's see I am 48 years of age and grew up in small
REALLY redneck town in north central Texas. Those vanilla moon pies aren't the true ones...they were only chocolate originally. As for RC Cola...no only Coke period.

I remember grape NEHIS!!! Yummy, my favorite! Dinner consisted of fried bologna/fried weiners with fried potatoes and some canned vegetable such as spinach with homemade biscuits or cornbread. The other meal staple was beans...red beans, navy beans, lima beans, black-eyed peas...all with hammock.

During the summer our meals would be supplemented by wonderful garden foods including: fried okra, fried squash, fresh green beans which were canned and used during the winter; plums (also made into jams/ jellies), peaches, watermelon, canteloupe, and fresh tomatoes, onions, and cucumbers (put into white vinegar and eaten with salt..chilled slightly).

Lunch consisted of goose liver, pickle loaf, or bologna sandwiches on white bread (Mrs. Baird's ONLY) with Miracle Whip or mustard, and a sprig of lettuce.

My breakfast consisted of cinnamon toast made with shortening, oatmel, cream of wheat or raisin bran and Donald Duck orange juice.

I don't recall ever eating out....hmmmmm. OH, the real treat was Sunday dinner at my dad's family which included roast with gravy and the whole nine yards with strawberry cake made from jello and canned strawberries! Banana pudding was served when there were OLD bananas to be gotten rid of...YUCK!!!

The only thing that the people drank the majority of time was iced tea and water. Sodas were special. I do remember drinking Dr. Pepper's with raw peanuts dropped into them. Also, I remember drinking Squirt.

I think that about does it! :hi:

Oh Lord they were the best. Are they still around? I don't get to the mountains as much as I would wish any more. Sigh.

I had cousins who would get a job at the RC bottling plant, work there long enough to fill a truck full of stolen product, and resign their employment. That was the 60s/70s...with that work ethic, who knows where they are today, maybe one of them changed his name and become Bernie Ebbers!

Rednecks love deer hunting and deer meat would be my vote.
In the south everyone eats what's called "soul food" on a regular basis.
But with the deer, there's guns (and sometimes beer involved) and pride with their skill at cooking it.

96. I'd vote for some casserole combining Velveeta,

canned biscuits, hot dogs, pork rinds, mayonnaise, frozen peas and carrots, and cream of mushroom soup. If there is not a recipe for it yet, some redneck will invent one eventually.

And for dessert, something involving Cool Whip, Jello, canned fruit, maybe a cake mix, and way too much sugar or other sweetener. You know, the kind of thing that's so sickly sweet your teeth are screaming "No!"

98. Grew up in Dallas raised by people from Cooper, Texas
(that's in northeast Texas near Paris).

Here's what we ate:

Ranch Style beans, macaroni and cheese, cornbread, Kool-Aid (when we could afford the sugar), Dr. Peppers (an even bigger luxury), chicken fried steak, fried chicken, biscuits, my mother's peanut butter gravy (had no peanut butter in it, but was a country gravy as thick as peanut butter...we used to smear it on the fried drumsticks and it would just hang on....made with meat drippings of course), crawdads we caught in this nasty creek near our house, fried bologna on white, olive loaf, pickle loaf, pb&js, tamales, tacos, pork rinds, saltines, chili, ribs, my mother's beer cheese soup, white rice, black-eyed peas. You get the idea. Oh and my dad ate something called cornbread mush: leftover cornbread put in a glass, pour buttermilk on it, then put sugar in it, mush up and eat. It was considered a dessert and he LOVED it.

Oh and chocolate milk. Yeah, we ate good, didn't we?

BTW, I also have a relative who makes a great squirrel gravy. We've been eating it for years! I have also had fried squirrel, but would not recommend it. Unless my friend's mother prepared it incorrectly, it was not good.
