3. Salmon Croquets or Salmon/Rice in Puff Pastry
Crouquets:

drain salmon, remove any bones or scales
add 1 or 2 eggs
chopped celery
lemon juice (one lemon's worth)
fine cracker crumbs (enough to make it moldable)

mix well, make into patties (like hamburgers)

fry in oil (deep or just a coating)

I like catsup on mine

for the other, use cooked rice instead of cracker crumbs (about 50/50 with the salmon)

fill and seal puff pastry (phyllo dough) bake

4. Depends on how much you have. . .
Salmon loaf is good. Chop it up, if it is whole. Season as you like, at least with salt and pepper. Mix with an egg, some breadcrumbs (or cracker crumbs) chopped green peppers, onion and garlic. Top with some more crumbs and some dots of butter or margarine. Bake in a dish (ovenproof) at 400. It's yummy and easy. Make sure, though, that you always have more salmon than the other ingredients. Cheers!

10. I grew up in a salmon family
My dad worked in the seafood business all during my childhood, then later owned a small smokery and cannery in Seattle. So, believe me, I've got salmon recipes galore!:hi:

OK, how about this:
brown in a medium frying pan with olive oil. Place on wheat tortillas with shredded lettuce, chopped celery, green peppers, tomatoes, and some sour cream and cheese. Top with salsa. Voila! Fish tacos.

12. The good, boneless, skinless kind, or
the nasty kind that has bone and skin in it? (The latter usually comes in larger cans that narrow toward the base.)
