What Should I make for dinner? |
|
I'm really sick of Chicken. We're trying to stick to Atkins. I have some asparagus and escarole in the fridge, otherwise I will be going to the grocery store shortly.
Any suggestions? Please help!

Cheap, easy, delicious, healthy. And low-fat, even if Atkins does allow for it.
On Edit: If that isn't your thing, I love lamb chops -- the shoulder cuts that don't cost a fortune. Or those long boneless pork tenderloions, some of which are marinated.

Very savory: (I don't do all that grinding and roasting of the spices. I figure they get toasted pretty well on the salmon. The vegetable bed is very tasty.
Salmon with Grilling Spices
4 six ounce salmon fillets
Black beans and corn (bed for salmon): 1 ½ Tbsp olive oil 1 large clove garlic, minced 1 small onion, finely chopped 1 15 ½ oz. can black beans, rinsed 2 Tbsp tomato puree 1 tsp dried oregano 1 small jalapeno pepper, seeded, deveined, finely chopped 1 cup fresh corn kernels ¼ cup of water salt and pepper to taste
Heat the olive oil in a small saucepan over medium low heat. Add the onion and saute, then add the garlic and saute about 8-10 minutes. Add the rest of the ingredients, cover and cook 10-12 minutes.
Grilling spices: 3 Tbsp whole coriander 3 Tbsp cumin seeds 3 Tbsp dill seeds 3 Tbsp yellow mustard seeds 6 Tbsp whole fennel seeds 6 Tbsp sugar 3 Tbsp salt 1 ½ tsp freshly ground pepper
1. Combine all seeds in a skillet over medium heat, and toast, shaking pan, until aromatic, about 4 minutes. 2. Using a spice grinder, coarsely grind the seeds, shake well to combine.
Rub 6 oz. salmon fillets with pepper and grilling spices in flesh side of salmon. Heat oven to 400 F. Heat a large, ovenproof saute’ pan over medium-high heat. Drizzle olive oil over fillets. Place fillets spice side down and sear, about 3 minutes. Turn over salmon, transfer to oven and bake 5-10 minutes. Serve on bed of black beans and corn mixture.

Probably; just means you'd have to cut the skin off that one side.
(P.S.A.: "Get your knives sharpened! Then let the knife do the cutting!")
Just get that pan frighteningly hot, and leave out the sugar on the rub. Call it three minutes a side, sort of like blackening (only not so cajun).

I HAVE to cook-I'm unemployed!
We've cut going out to twice a week (there were some weeks where it was every night-which is why we both gained weight!)

Us too, kinda. I will NOT cut out scotch and coffee so maybe I'm spinnin my wheels. Anyway... We wanted a good stir-fry. Chicken and bamboo shoots and pea pods and broccoli and peanuts and liddle biddy Thai peppers and all that good stuff and all Atkins approved. Trouble is we usually have it either WITH fried rice or OVER rice or noodles. What to do. "Let's try it over slightly wilted/semi stir-fried angel hair cabbage." sez I. Splashed some soy sauce on. FANTASTICO! A little gassy, but gooood.

Throw a pot roast in the crock pot in the morning, go out and overthrow the government, come home to a nice supper. I did that just yesterday.
Recipe:
Get a three-pound sirloin tip roast Rub with salt and pepper Brown in a saucepan with onions Toss in the crockpot with 1 chopped onion, 1 chopped carrot, 1 chopped rib of celery, 1 bottle of beer, a good shake of Worcestershire sauce. Put the lid on and set it to 'Low.' Spend day shopping, doing laundry and overthrowing the government. Come home to a nice supper.
