Looking for BBQ sauce receipes |
|
Hope you folks have some good ones,I don't. We just use Kraft Hickory Smoke, which is good but there's something missing, and it ain't pepper cause I add that to it. We finally have cooler weather here and the grill is gonna get a workout. Thanks.

1. Oh man, I have a beaut...... |

Fry up some finely chopped onion, a shedload of garlic, some chopped fresh chillis, some ginger and some tomato puree (tomato paste??? in the US). Stick in some salt and pepper to taste. Add a decent dash of mesquite liquid smoke marinade (which you can't buy in the UK but which is freely available in US supermarkets). And then.........................some Coke/Pepsi (I use Cherry Coke, but that's me). Vary the amount depending on how big your pan is, but I generall throw in at least 500ml, sometimes much more.
You then simmer this mixture until it's reduced by two thirds and is thick and sticky (watch for it boiling over).
Be careful as you taste it, 'cause it sticks like napalm....and that's the beauty of it - it really sticks well to whatever you baste in it. Chicken pieces+ribs+king prawns are AMAZING with this recipe, and you can just use it as a relish on burgers/steaks if you like.
Always make loads of this, 'cause you have to reduce it down and it's always popular. To get a litre of this, you'll need 3 litres of Coke!
Vary the amount of garlic/chilli depending on your taste.

But does a shedload equal a shitload here in the states? The sticky part is from the coke, yes? R.

4. Shedload = polite form of shitload... |
|
And yes, the Coke makes it sticky - it's all the sugar in there.
It is definitely a "sweet" barbecue sauce, but it can also be quite hot too, so it's not TOO sweet and sickly.
In an emergency, you could always stick a bit of Balsamic vinegar in there to give it a sweet/sour twang, but I like it as it is.
Oh, and a decent dash of bourbon never goes amiss in my experience!

The Food Network's newsletter. There has been a great deal about grilling and barbecue sauces, including a contest, featuring Al Roker, just recently. Here are many recipes that this great resource has to offer. Actually, they sound pretty good!:-) http://web.foodnetwork.com/food/web/searchResults?searchString=Barbecue+Sauce&site=FOOD&searchType=Recipe&GoSearch.x=11&GoSearch.y=7

All one has to do is Google bbq+sauce+recipe. Lucky for us, the web is stiff with great and varied recipes for BBQ sauce. Sweet, not-so-sweet, hot, mild, inbetween, strange, Bull Goose Loony and quirky, a recipe for any sauce you might imagine and several you just didn't have the guts to imagine can be Googled up.
