I'm bored as hell here, so feel free to ask me anything about food! I love to cook and wouldn't mind giving you a few tips.

with garlic mashed potatoes and a spinach salad with cranberries, chopped walnuts, goat cheese, and honey viniagrette sauce. I'd also have a kick ass glass of white wine to go with that. That's what I would want Rachael Ray to cook for me.

Is selling her salsa to the guys I work with (they think it is better than any they have ever had) and we are thinking of putting out quart jars of a hotter blend - how many habenaros should we use (making 4 quart batches at a time). I don't want it to be too hot to eat but I want it to be hot enough they will remember it :)

10. Just do a taste, and try doubling the number of habaneros in your recipe

and do a taste test. If it's too hot, cut down on the number of habanero peppers. What kind of onions do you use in your salsa recipe? I like to use red onions and I LOVE using cilantro in my salsa recipe.

White onions for now. Told the guys at work she was going to work on the formula for it all and they insisted she not change one thing. So I think for now will just add some heat for the speciall batches and take it in and let them test it out. If too hot they will scream and I will know :)

We started out just canning salsa (and other stuff) for ourselves. I took some in to work an people were wanting to buy it.

Will try another batch with red onions and see how they like it!

48. Chunky
With fresh picked garden veggies from mom's house. We just bought the house next door and will plant our own garden next year. Mom has tons of tomatoes and such so we used them.

We have a big lot, about 165' by 65' so plenty of room to grow our own and leave chunky :) Next year we may get a business license and work on things (wife is darn talented in cooking and art, wants a small basket business for fun).

She is a wonderful cook and decorator - me, I can deep fry chicken legs :)

Also has about 50,000 bees making fresh honey. Best I have ever had! He sells it as well and we may market it with our baskets, I am blessed with a pretty wife who can cook damn well (and she is a red head...)!

I bought this house so that as my folks get older I can be there for them, and there are so many side benefits. The wife is happy (she and mom get along better than her and her mother), I am happy, my daughter gets to walk a few feet next door and see the folks...overall things are going well.

My wife has always dreamed of having her own business, and now the wheels are turning slowly. When she lived in CA she worked at an aids clinic and was married to a real jerk, now she is in Ohio, had her first child (now 3), and her skills as a cook are in demand. Amazing how things develop. She has sold 4 quarts in one day when she was not even trying to sell any, and now she has labels and jars and we are making a little money (a few dollars profit) off something she does for fun.

My dream is to makes hers come true. Hopefully I will realize it. When she was depressed and living in CA she dreamed of having a simple life with a garden and baby, so far we are there and after 6 years together I am finally making her dreams come true (when we met I lived in a garage in CA with roaches that crawled on us at night, we just bought our first house in August).

Dreams are the fuel that keeps our hopes alive, I hope someday to make all hers come true - and this little thing of salsa is a big step in that dream. Thanks for all your replies, I will keep them handy!

... recently got a canner (freaking tank :) but she tells me that there is more than one way to handle salsa. Apparently, if you do the full blown in-jar canning trick you compromise the textures/taste - so there is another method that is not so "brute force".

But yeah, I understand you cannot just pour it in a jar and expect it to last very long :)

I'm allergic to garlic or some of the better store-bought salsas would be ok. But virtually all of the good ones have garlic so I need to make my own.

She's gonna give it a whirl soon!

I love to butter my slices of white bread, and then I put them down with a slice of cheddar cheese, and I put the bacon on top of the tomato slices on top of the cheese, then I layer that with another slice of cheddar cheese. It's soooooooo sinfully good.

63. I use a Lemon Meringue pie recipe for my key-lime pies
The official way to make these calls for Eagle Brand milk; I made one the official way and it tasted to me like an Eagle Milk pie. Maybe I fucked it up. Or maybe eagle-milk pies are popular in Florida. Who knows? They eat weird shit there.

On the side of an Argo Corn Starch box is a very good lemon meringue pie recipe. Just substitute key lime juice for the lemon juice.

43. the way my mom makes it is delicious
She sears the pot roast in a pan, and then she puts it into a roasting pan, and puts in chopped potatoes/carrots and onions. She uses about a full bottle of Coke to fill the roasting pan up. Then she leaves it in the oven at about 300 to slow cook all day long until she gets home at 6. It's so tender---and soo delicious.
