You need
A couple pounds fresh green beans, remove ends don't cut in half a half pound very thinly sliced pork loin 1 large bunch scallions 4 cloves garlic 1 tablespoon fresh ginger fish sauce, hot "rooster" sauce, soy sauce, 1/2 cup broth or water light vegetable oil
In a large wok or pan fill a couple inches oil and heat until a bead of water sizzles in the oil.
Drop in a handful of beans, cook them quickly they will fizzle and start to die down remove and do till all the beans are done. Beans should only cook 1 to 2 minutes
Allow the beans to drain. Remove oil from the cool wok until you just have about a tablespoon.
Heat wok again, cook pork stirring, add garlic and ginger, scallons, broth and spices to taste. Toss a bit and you're done.
Serve with rice.
This is my family's favorite dish that I cook. Works best with those small French green beans but any garden variety will do.

It's not traditional in this dish to add cilantro. The scallions should be barely cooked use lots of the green ends.

Warning, not exactly a "gourmet" dish. It's claim to fame is it's cheap easy and very quick (and you did say "quick!"). I lived on it as a student and it was quite popular. Sorry, no exact ingredients, I haven't had a recipe for years so it's all from memory.
- Cut up a couple of chicken breasts in strips, cubes or whatever. - Saute in a skillet with some peanut oil - Add cold leftover rice and stir a bit. - Combine half soy sauce and half corn syrup and mix in - Add some chopped parsley and chopped green onions - Top with peanuts and serve
Really tasty
