Super Size-Why didn't McD fries decompose? |

In the deleted scenes section of Super Size Me DVD, Spurlock put McDonald's food in about 5 separate jars, to watch them decompose. After 12 weeks, all sandwiches had some healthy fungi on them, but the fries stayed perfect. Why?
I think I have a theory. They pertrified. Ever find one in the car, under the seat, months or years after they landed there? Those things are hard as a rock!

....I guess you're right, they pretty much petrify. They don't change color, shape, or texture really.. they just get really hard.
