The simple things in life: 'Red Stew' recipe! :-) |

For the second time this week, we're actually goping to sit down and have a meal at home, and Tony asked me to make 'red stew'. It's an old family recipe, and easily the best stew I've ever eaten (OK, so I'm biased! :P ):
1/2 lb. salt pork, diced 3 lb. arm roast 1 qt. tomato juice 6 medium potatoes, cubed 6 carrots, diced 1 cup peas 1 cup corn 1 small head cabbage, cut in 6ths or 8ths 2 medium tomatoes, peeled and chunked 2 cloves garlic, finely minced 3 whole cloves 1 bay leaf Salt and pepper, to taste
In a heavy skillet or Dutch oven, brown and render the salt pork over medium heat, and remove from skillet and set aside. Salt and pepper the roast, dredge in flour and brown in pork fat. Remove and cube. Return pork and beef to skillet and add remaining ingredients, except the cabbage. Add enough water to cover by one inch. Simmer on low heat 1 1/2 - 2 hours. 20-30 minutes before serving, place cabbage on top and let it cook until it's 'fork tender'.
Serve with any hearty bread or roll (we prefer soda bread or corn bread).
People WILL ask for 'seconds', trust me.

But, to be authentic, you need squirrel. Also, a lot of folks add chicken.
Burgoo was something they cooked at hog butchering time and they had big parties.
A very close relative of Burgoo is Brunswick Stew.

organized around the creation and consumption of burgoo--a bit like a chili cook-off, I suppose. I understand that there were beef, pork, and chicken burgoos. YUM!

but what's an arm roast? I haven't heard that term in my neck of the woods. Is that like a beef chuck roast?
I do a beef stew with no peas, corn or cabbage, but I put in bell pepper, celery, canned diced tomatoes, turnips, parsnips and boiling onions plus a little red wine. Good cool weather grub.

But any good, lean cut would do, I think. It gets tender with the slow cooking, regardless.
