I just did something evil to a yellow cake mix

I had a whole tub of Ricotta Cheese that was getting a little too close to the expiration date for comfort. I did a google search and found a recipie for Ricotta Cake.

This has got to be the most fabulous thing I've made all year-and I'm a pretty good cook. And it's soooo easy.

You make a yellow cake mix per box directions and pour into large rectangular pan. Mix the 2lb tub of Ricotta with 3 eggs and 3/4 cup of sugar. I also added a tsp. of Vanilla. Pour this on top of the unbaked cake mix. Do not mix- Bake per package directions until knife comes out clean. I then topped it with Apricot Preserves for a pretty sheen.

I'm not a Cheese Cake fan -This had all the creamy goodness without that thick fatty feel in your mouth-it's much lighter.

I've gotta go let my pants out now.
