Planning Victory Dinner
Oldest daughter and new hubby coming over to watch returns, younger daughter and i are planning tonite's meal.

We will start with Tapas: French bread with olive oil, balsamic vinegar, sprinked with feta, sliced melon on the side, olives and fontina cheese. I'll have a sherry.

1st course, homemade French onion soup with baby swiss. More french bread.
Will have a glass of french Merlot.

2nd course: Homemade spinach and smoked Gouda quiche, perhaps more melon. bread....I may switch to H20, or start on the Chard. Probably both.

Salad to finish. Greens and the last of my tomatoes, may make up a raspberry vinigrette, may just stick with the bottled, and bread of course. I hope we finish the whole loaf. Depending on how returns are coming in, may open the champagne.

Milk chocolate ice cream for dessert. The kids picked this one.


am i missing anything?? :)

1. OK, sounds delicious BUT . . .
where's the MEAT!? I'd add some grilled chicken breast with sale and pepper, some olive oil, a little bit of balsamic vinegar, and some cilantro (add a little bit to the salad too). This is along with more feta (you can never have too much feta), some very thinly sliced red onions, and some lightly toasted pine nuts.

2. Meatless on purpose . . .
my 2 daughters and i had decided last year to start having 2 or more meatless dinners a week. dropped beef. kept poultry, fish and pork in small amounts.

we have all backslid (oldest married, hubby eats whatever crosses the plate) and so since we've been negligent, am using the occasion to get back on the veg wagon.

but the chicken recipe sounds great, wish i had it last nite, we had chicken! I'll try it soon.
