I know a few people who were on the wait staff, so I heard all kinds of horror stories about how things were done in the kitchen - "freshly-prepared" sauces sitting in pans in the freezers dripping into each other, the army of rats that lives outside in the garbage can area (they are in the park, after all). Maybe it's improved in the past few years, but I doubt it.
