Here's my old stoner recipe for Chile con Queso (and, believe me, high or not, you're gonna love this stuff):
A jar of Cheez Whiz, although a brick of Velveeta works just as well, I think. A large package of Philadelphia brand creme cheese As many minced jalapenos as you think you can handle.
Melt them all together. Works as a dip or just poured over tostadas.

Greyerzer and Emmentaler, maybe Beaufort ; no other cheese has any business ending up in a fondue.
On edit: it is not like there is only one type of Swiss cheese.
