Anyone ever Bar-B-Que a Cheesecake?
Edited on Tue Nov-23-04 12:32 PM by dr.strangelove
Yes thats right. I want to "bake" a cheesecake on my grill. Why? My oven is broken and won't get fixed until after Thanksgiving. I could buy a cheesecake, but I like to make them. So I'm going to try it on the grill. I can get the grill to 350 on mid-low heat. I going to cover the grill with foil and raise the pan on a rack. I am a little nervous, and I ordered a cheesecake as a backup, but I hope it works.

What do you think?

Edited for spelling of oven - thanks underpants

9. I too make a mean cheesecake
but I have only the Weber to cook it on. I'd rather not, but I am trapped here.

12. Well i hope it works for you but that crucial temp change
will have to watched like a hawk. I cook mine at 450f for 10 mins and then bump it down to 25-f. Maybe you want to try putting it in a water bath, that may help you avoid the dreaded...dundundun-crack on top.

But hey, thats what fruit toppings are for. I think I'm making a fresh strawberry topping. We'll see.

2. I prefer key lime pie
but that's just sweetened condensed milk and lime juice in the fridge over night.

3. Sounds good to me!
just make sure you use indirect heat. If you can, turn on only one side of the grill and put the cake on the other side, preferrably with a heat shield underneath.

6. Thats the plan with the foil
I hope it will be a good heat shield. The idea of using one side for heat only is great. I'll try that and let you know.

4. it can be done
if you use a charcoal grill you can better control the heat with the number of charcoal bricks used. I have cooked many cakes in dutch ovens on charcoal.
Take it easy and it will work
I don't use a gas grill so I can be of no help there

8. the most critical part of cooking a scratch cheesecake
is the cooling cycle - making sure that the cheesecake cools slowly and in stages.

How big is your grill? Hot air has to circulate around the pan, and the temperature of the grate may be much higher than the temperature shown on the grill thermometer, which could lead to uneven cooking.

You can probably do it -- good luck!

11. Yeah - the cooling cycle is tough
I'm worried about getting it inside the hosue without a crack. Usually I let it cool down with the oven open before a little spell at room temp. Then gradual cooling in the fridge. Not an option here. I'll let you know.

Those "no bakes" are good, but they don't hold a candle to the real thing. I think my sister would throw me out of her house if I showed up with a "no bake" cheesecake.

17. I DID IT!
I didn't make the cheesecake yet, but I have been the subject of a copycat thread. This is my first copycat producing thread, so I am understandably honored. Thanks all for the tips and opinions, I'll let you know how it works out.
