Best Thanksgiving tip and recipe |
|
This is my annual tip - don't think you gotta make the mashed potatoes at the last minute (along with the gravy, veggies, carving and all the other last minute stuff.) Smash your taters hours before, w/milk and butter and whatever you use. Put 'em in a preheated crock pot and give 'em a stir every half hour or so. If serving buffet-style just plug it in at that table when it's time to eat. Taste like they were just mashed and they stay hot through the entire meal.
Recipe - Green Beans Gremolata. I'm always looking for new side dishes that don't involve canned french-fried onion rings. Tried this out with my actors (yeah, yeah, they eat anything)and it won raves. (BTW, when I say "my" actors, it's because this is what I do - www.mysteriesbymoushey.com)
Easy-peasy, serves 8.
Gremolata 1/2 C. minced fresh parsley 3 cloves garlic, minced 2 T. grated lemon zest 1/4 C. freshly grated Parmesan cheese
Mix together.
2 lbs. fresh green beans, trimmed. Steam till crisp-tender. Toss with 3 T. olive oil
Then, toss with gremolata.
Serve at once.

mmm. Sounds good. My favorites are all in the gremolata. |
|
And my favorite kitchen tool is the Braun hand mixer or whatever they call it. I got the deluxe version with several attachments and I've only used two of the three aside from the basic hand mixer.
Anyway, I can't wait to try the gremolata. And I suppose it's salt and pepper to taste.

8. Garlic mashed sweet potatoes |
|
that is right -mashed sweet potatoes
For at least 3 decades my siblings and I turned away every Thanksgiving from the dreaded candied sweet potatoes with the crappy marshmallow syrupy s**t served for dinner.
A couple of years ago, one of my aunts found this recipe for garlic mashed sweet potatoes. All you need to do is add garlic to your liking and some butter to mashed sweet potatoes. Actually, you don't need the butter, use a little bit of broth to help fluff them up (and is much healthier, IMHO). Damn that was good. I even turned on my siblings to it, and I think one of them had seconds.
This is one of two ways I will eat sweet potatoes or yams -the other way is roasted, plain, even better when I put them on the grill. And garlic sweet potatoes is what I am serving on this Thanksgiving day.
