Cookin' with Kitten : Thanksgiving Special.
In honour of the holidays:

Mouth watering.....Jambalaya!!!! (you were expecting turkey leftovers?)

Jambalaya

3/4 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green pepper
2 garlic cloves, minced
2 tablespoons butter or margarine
2 cups cubed fully cooked ham
1 can (28 oz) diced tomatoes, undrained
1 can (10 1/2 oz) beef broth
1 cup uncooked long grain rice
1 cup water
1 teaspoon sugar
1 teaspoon dried thyme
1/2 teaspoon chili powder
1/4 teaspoon pepper
1 1/2 lbs fresh or frozen uncooked shrimp
peeled and deveined
1 tablespoon chopped fresh parsley


In a Dutch oven, saute onion, celery, green pepper and garlice in butter until tender. Add the next nine ingredients; bring to a boil. Reduce heat; cover and simmer until rice is tender, about 25 minutes. Add shrimp and parsley; simmer, uncovered, until shrimp are cooked, 7-10 minutes.

Serves 8.

3. But....you can cook WITH your kitten if you so choose....
You can let them lick the shrimp..... ;)

6. May I suggest
Leave out the sugar.
Use Poblano chiles for green pepper.
More thyme and parsley. Lots more parsley, half sauteed with the garlic.
Andouille instead of ham.
Shrimp is good, but so is chicken if on a budget. Using both is even better.
Cayenne pepper instead of chile powder.

Saute celery first, add onion and peppers; add garlic so it sautes only for 2-3 mins.
It's OK to double everything. Tastes great as leftovers nuked for 2 mins on high.

(I used to work in a cajun restaurant.)

7. I couldn't find your main ingredient (kittens) in above recipe
as I re-checked your subject line, I noticed that it isn't "cooking with kittens"

Sounds like a great recipe. Thanks, Kitten. And I am glad that it didn't contain any kittens... :evilgrin:
