Does anyone make a diabetic cakemix? |

I've got a request for a pineapple upside downcake for a diabetic and I'm wondering if someone makes a mix that can used for a base. I'm just being lazy, I know I can stir a cake together from scratch using a sugar substitute, but, I don't want to tear the kitchen up.

I've bought some but, of course, I can't think who made them. They're usually in the "diet" section of the grocery store. I've seen cakes, frosting mixes, puddings, etc. Sorry I don't have the brand name but they do exist.

Atkins makes a low carb bake mix. Check http://www.atkinscenter.com for a store that carries their products. They are a bit expensive.
