19. One thing about Batali ....

He seems so 'ethnocentric' regarding food ... he is obviously italian (as am I to a degree), but Sakai-san is french trained and VERY experienced ... Can one who focuses on South Italian cuisine have success against the worldly "Delacroix of French cooking" ?? ...

I think Puck has the best chance for head to head matches against Sakai ...

Oh .. and Flay too .... HATE his antics ...

But I think the biggest thing against him is all the judges are American, and used to American tasting food. His Japanese influenced cuisine has much subtler flavoring that Americans arent used to.

30. Julia Childs said Italian cooking is

not cooking so much as it is assembling ingredients. Ironically Batali seems to agree and emphasizes bringing together the best ingredients with as little frill as possible. I love Mario's stuff and as someone who used to make a living in the kitchen, I love to watch him work. The guy has chops. While others work from pyrex dishes full of pre-cut ingredients, Mario cuts it all on camera in real time. A quick bio below.
